2nd Year Vegan Anniversary!!
2 years ago my life changed. I decided to stand alone in compassion rather then follow others in ignorance. Going Vegan has been the best experience of my life. It lead me to meet some amazing people and my health has improved. There is nothing I would change about my journey. ❤

haha no problem ;D I'm not super experienced and I only started recovering (from an ed) a few months ago, but being high carb vegan really helps so much. Sometimes when I've got a craving for something that I can't quite grasp, I just get me some chickpeas/beans and mash them up with lime juice and a few spices (it's like hummus, just not as complicated and loaded with unnecessary fat) and that satisfies all my cravings :)

Since cooking like a crazy lady from Dr McDougall’s cookbook I’ve noticed 1 thing… his serving size suggestions are way to small UNLESS there are legumes involved.
Doing a little research and experimenting on CRON-O-Meter I’ve learnt how low fat AND low calorie beans are - on average one can only contains 350 calories! You could eat 5 cans of beans throughout the day with some veggies and ONLY reach about 2000 calories - now that is a crazy cheap way to loose the bulge.
I’m now wondering if to experiment with this theory and see if it works. I’m fed up with never feeling satisfied after meals and I know beans can solve that. Also, come the afternoon I have low energy but once I’ve had my beans at dinner I’m alive with energy - again, could beans be the answer?!
It would mean A LOT of legumes (beans, lentils & chickpeas) and I’m scared of getting board and then binging and being back at square one. The macro ration would be about 70% carbs, 20% Protein and 10% Fat. So still high carb. Oh and the awesome thing about the fat is you get ALL your Omega 3’s and hardly any Omega 6’s - win win!
I don’t know - I’m just wanting to simplify my diet at the moment and think this might be a good way to do it. Cheaper then fruit, just as healthy, no restriction. And it would be nice to have a break from grains!
My family will think I’m mad - but if they could support me through a liquid diet 3 years ago then they should be ok with me doing this.
Meh don’t know if I’m returning to disordered-eating-ville or if I’m actually on to a winner. I shall sleep on this idea me thinks!! ZZZzzzzzzz

They are! :) I have Dr McDougall’s Quick and Easy Cookbook. I’m working through the 300+ recipes one by one. All plant-based and oil free ❤ I got it off EBay :)
